In the world of craft brewing, consistency, safety, and quality are not just buzzwords, they’re essential to the health and reputation of your brewery. One of the most effective ways to ensure these values are upheld daily is through clear and practical Standard Operating Procedures (SOPs).

In many breweries, SOPs are more than just documents; they’re part of the daily routine. When they’re clear and easy to use, they become helpful tools for training, everyday tasks, and solving problems. Whether you’re in the cellar, brewhouse, packaging area, or front-of-house, a good SOP makes sure everyone knows what to do, how to do it, and when to do it.

What Makes a Great SOP?

Effective SOPs are:

  • Simple and Specific: Use clear, common language that matches how your team talks and works. Tailor each SOP to the specific equipment or task.
  • Visual: Incorporate diagrams or photos so new staff can follow along with confidence.
  • Current: Review and revise regularly. A stale SOP is just as bad as no SOP at all.
  • Easy to Find: Keep SOPs in spots where the work gets done. Save digital copies too, so your team can pull them up quickly on a phone or computer whenever they need them.
  • Built with Safety in Mind: A solid SOP not only explains how to do the job, but it also points out any risks and how to stay safe while doing it.

Turn SOPs into Daily Tools

To make SOPs useful, turn them into checklists that are followed every day, not just documents you look at when something goes wrong. And remember: SOPs aren’t a replacement for training. They’re a foundation that good training builds on.

For example, our brewhouse cleaning SOP includes:
• What cleaning chemicals to use and how to handle them safely
• Step-by-step instructions for cleaning tanks and lines
• How to check and record cleanliness before brewing

This ensures everyone on the brewhouse team can keep equipment clean and safe every time.

The Safety Payoff

A big part of writing solid SOPs is thinking through the safety risks involved. BA’s Hazard Assessment Principles Guide is a great starting point and it helps you spot potential hazards and figure out how to handle them before they become a problem.

Take confined spaces, for example. They can be tricky and dangerous if not managed right. The BA has a guide that breaks down how to work in those areas safely. Building this kind of safety thinking into your SOPs helps protect your crew and keeps your brewery running without surprises.

At the end of the day, great beer starts with great processes, and nothing ruins a brew day faster than a preventable mistake. SOPs aren’t just paperwork. They’re peace of mind.
